Another interesting project was successfully completed in autumn 2021 with dégorgement and we are happy with our new product.
There were too many grapes hanging on the Cabernet Blanc vines, which were still very young in 2016, so we had to remove many bunches in early September to lighten the vines. However, these already had a good aroma and lots of juice, so we decided to make a sparkling wine from them - "Méthode traditionelle".
After the first years in steel tanks, the "prise de mousse" took place in spring 2019 and after 2 and a half years of fermentation in the bottle, it was dégorgeted in September 2021. We decided on a light brut version and are very happy with the result. The final, probably unique product is available now - our
